Featured Recipe. . .

Cheese & Tomato Strata
7-10 Slices Bread
3 Tomatoes, sliced
1 Cup Shredded Imitation Cheddar
5 Green Onions, sliced
4 Large Eggs
1 1/2 Cup Milk
1/2 tsp salt
1/4 tsp pepper

Lightly grease an 8 inch square baking dish with butter. Place 3-4 slices of bread on the bottom of dish in one single layer. Arrange half the tomato slices over bread, sprinkle with half of the Whitehall Specialties Tierra De Queso Imitation Cheddar Cheese Shred and half of the onions. Cover with additional slices of bread, overlapping crusts. Top with remaining tomato slices, green onions, and Tierra De Queso Cheddar Cheese. Whisk eggs in a medium bowl. Add milk, salt and pepper. Whisk until well blended. Pour egg mixture over bread. Cover and refrigerate overnight, or at least 2 hours and up to 24 hours. Heat oven to 350 degrees. Uncover and bake 45-50 minutes or until puffed and golden and cheese is slightly browned. Dish tests done when a knife inserted near center comes out clean and dry. Season with additional salt, pepper, and onions as desired.

Featured Recipe. . .

Sour Cream Lemon Cake
3 eggs
1 pkg Lemon cake mix
2 cups Imitation Sour Cream
1/3 cup oil
1 1/2 cups coconut
1/2 cups sugar
2 cups whipped topping, thawed
Toasted Coconut and
Blueberries, for garnish

Preaheat oven to 350 degrees. Spray a 10 cup tube pan with nonstick cooking spray. Beat eggs, cake mix, 1 cup Imitation Sour Cream, and oil in large bowl for approximately 2 minutes. Pour into prepared pan. Bake 40 minutes or until cake tests done. Cool pan on wire rack for 10 minutes before turning out. Run knife around edges of pan to loosen cake. Invert cake onto rack and gently remove cake from pan. Cool completely. Mix remining 1 cup Imitation Sour Cream, coconut, and sugar until well blended. Fold in whipped topping. Spread on top and sides of cake. Garnish with toasted coconut and blueberries or as desired. Store in refrigerator.
